From a 27 year old family owned estate just SE of Oakbank.. The dirt is brown loam with traces of limestone and slate. Hand-picked fruit delivered to the winery with refrigerated transport.
Crystal quartz green.
A touch of fresh cut grass with evolving gooseberry and passion fruit.
Initially quite a tight structure that loosens on the back palate showing layers of lemon, lychee, melon and citrus. Some texture developing from extended lees contact. All the fruit salad complexity is balanced by fine, racy acidity that keeps this complex fruit parcel in check.
Peak Drinking / Cellaring Potential
Normally we would suggest short term cellaring for Sauvignon Blanc however this wine will be an interesting journey as it develops over the next 5 years to 7 years. It will become increasing textural as the fruit loosens over the next two years.
The perfect match with spicy Asian style dishes, Thai, Singapore Street foods. As the wine ages it will handle bigger slow cooked poultry dishes with richer flavours.
