A single site selection from a mature Polish Hill individual block + 20 years. Combination of North South and East West panels on an east facing, gentle sloping block slope. Slatey, rocky soils that make the vines work creating fine intense flavours and naturally high acid.

Colour

Crystal clarity with green highlights.

Bouquet

Delicate blossom perfume. Touches of cold toast / bread creeping in as the wine ages.

Palate

Retains a zesty fine lemon, slight custard and mineral characteristics. Beautifully balanced and poised wine. A long clean finish with a central nerve of natural acid is a hallmark of the sub region.

Peak Drinking / Cellaring Potential

Another 6 – 8 years comfortably. This wine may reach its 20th birthday under ideal cellaring conditions.

Food Matches

Delicate fresh seafood such as natural fresh Coffin Bay oysters or fresh prawns served in newspaper, hand peeled with lemon / lime wedges.
