The base wine is from 2011, 60% Pinot Noir and 40% Chardonnay from Oakbank Adelaide Hills. True Methode Champenoise
This is a non-vintage wine produced from multiple vintages triaged since 2011. Premium fruit was hand-picked in the cool of the morning and transported to the winery, gently pressed and fermented. Following the primary fermentation the base wines are triaged where they underwent a secondary ferment in bottle. The result is a complex sparkling wine with a complex nutty yeasty autolysis character and a beautiful fine bead that has a lovely persistency in the glass.
Handpicked fruit from Oakbank Adelaide Hills. Adelaide Hills cool climate vineyards are world famous for producing fine Pinot Noir and Chardonnay with high natural acidity. In most years ideal for method champenoise sparkling wine production.
