This is a non-vintage traditional bottle fermented wine produced from multiple vintages triaged since 2011. Made from 60% Pinot Noir and 40% Chardonnay sourced from the Adelaide Hills SA. Premium fruit was hand-picked in the cool of the morning and transported to the winery, gently pressed and fermented. Following the primary fermentation, the base wines are triaged where they underwent a secondary ferment in bottle. The result is a complex sparkling wine with a complex nutty yeasty autolysis character and a beautiful fine bead that has a lovely persistency in the glass.
